Two preservation methods coexist on the backpacking meal market, usually sold under the same label: industrial freeze-drying, historically dominant, and small-batch dehydration, a more recent approach built around taste and a leaner production process.
Here is what actually separates them, beyond the catch-all term « freeze-dried » that everyone uses out of habit.
Two processes, two production logics
Process 01
Industrial freeze-drying
Food is deep-frozen to around −40 °C, then the water is drawn out under vacuum by sublimation. Efficient and widespread in the outdoor industry, but energy-hungry, and it can damage the texture of certain ingredients. Hence the recurring complaint about freeze-dried meals: a spongy texture, or a flat taste once rehydrated.
Process 02
Small-batch dehydration
The dish is fully cooked first, like any home meal, then gently dried with warm circulating air at low temperature, around 60 °C. Moisture leaves without locking the aromas away in the cold. The result keeps far more of its home-cooked character, at the cost of a slower process that does not scale easily. That is why so few brands genuinely offer it.
What it changes on the plate
The typical industrial meal is engineered for function first: light, calorie-dense, long shelf life, but with a long ingredient list, preservatives and flavour enhancers included, to make up for what the process took away.
A small-batch dehydrated meal starts from the opposite end. The recipe is designed as a dish first, preservation comes second. That usually allows a shorter, more readable ingredient list, with no additives needed, because drying alone is enough to preserve the food.
What about environmental impact?
This angle is rarely highlighted by brands in the sector. Industrial freeze-drying consumes considerably more energy than dehydration, because of the deep-freezing stage and the vacuum step that follows. Warm-air dehydration, by contrast, is a leaner thermal process.
For the same goal, a light meal that keeps without refrigeration, the two techniques do not carry the same manufacturing energy cost.
How to choose your backpacking meal

Is the ingredient list short and readable, or long and full of additives?

Are the weight and calorie count in line with the effort ahead? Around 700 kcal for 140 g remains a solid benchmark for a full day out.

Is the origin of the ingredients traceable, or merely « assembled » from components of unstated origin?

« Freeze-dried » has become a generic label covering two very different ways of making a meal. Industrial freeze-drying remains the historical reference, but small-batch dehydration offers an alternative much closer to home cooking, with equally reliable preservation and a leaner manufacturing footprint.
